chocolate-covered peanut butter balls (healthy)

as promised! the healthy stuff.


measure out, grind and mix together...
1/3 c. quinoa seeds
1/3 c. flax seeds
   1 c. dried, unsweetened coconut
1/4 c. almonds
1/2 c. oats
   3 c. corn flakes (smash these)
mix in...
   3/4 c. sorghum flour
1 1/2 c. natural peanut butter
   1/3 c. raw honey
in a pot, boil 1 c. water. 
add 2/3 c. skim milk powder.
whisk or blend.
add part or all of this to your mixture to reach desired consistency.
the mixture will be oily and fall apart, but you should be able to mould it in your fist and eventually form it into a ball. freeze.






in a pot, on super-low heat, mix...
1 1/2 c. semi-sweet chocolate chips
      2 T. shortening
      1 T. olive oil
keep chocolate warm to keep it from hardening.
roll balls in the chocolate, fill up your waxed-paper lined cookie sheet and refrigerate.
















bottom-line: 
make a sticky goo, roll it into a lump, and coat it with chocolate! yum. just get creative!

disclaimer: the sugary stuff is better. but hey, we already knew that.
